For the first time, the nonyas of Penang have come forward to share their fiercely guarded cooking secrets.
In this special volume is a compilation of over 150 original recipes handed down from mother to daughter, or aunt to niece, through several generations. Some of these recipes have never before been published or featured on the menus of nonya restaurants; a few of the recipes are now seldom prepared, even in Straits Chinese homes.
This book is the result of two years of collaboration between the guardian of the Penang Peranakan culture, the State Chinese (Penang) Association and Star Publications (M) Bhd, aimed at the preservation of the true flavours of the Peninsula’s northern nyonya cuisine. As it is, some precious recipe have slipped beyond the realm of recall of the oldest nyonya on the island.
Every recipe is illustrated in full colour, and cut, cooked and wrapped to the nyonya exacting standards. Many of the dishes are photographed in beautiful, original nyonyaware in a small effort to recreate its past splendour. Some of these recipes are wrought from their crude, original scribbling, and vigorously tested by the publisher’s editorial team, a commissioned recipe tester, and the Association’s Ladies’ Circle, a group of nyonyas who meet regularly to share recipes and cooking tips-and dance.
Through this definitive cookbook, we hope that the unique flavours from the Penang Nyonya kitchen will, once again, dance on our taste buds.
